Homemade Pasta Recipe – Potato Gnocchi

In this cookbook review of Homemade Pasta Made Simple, I will be making the homemade pasta recipe – potato gnocchi for the first time.

 

 

 Not only does this cookbook give you a lot of tips you won’t find in a basic recipe.

It has over 50 homemade pasta recipe and over 30 homemade pasta sauce recipes.

Straight from Italy. It’s a great cookbook if you are wanting to try making pasta for the first time as there are really easy recipes, that take very few ingredients, that you probably already have. It’s also great for the experienced pasta maker too.

 

Some of the recipes you do not need any fancy equipment just what you probably already have in your kitchen. She explains in detail about the ingredients, tools needed, and how to handle the dough- which is the most important part. Whichever homemade pasta recipe you choose you’re sure to impress all of your dinner guests. I made the potato gnocchi which is a harder one to make. If you don’t do it right your homemade pasta recipe will turn out like dumplings. You don’t want that. You want them to be lighter and fluffier. With this cookbook, you can learn how to do that.

Now let’s make our Homemade Pasta Recipe: Potato Gnocchi

What you need:

  • Stand Mixer (optional)
  • Gnocchi board (optional)
  • Potato Ricer ( I didn’t have one so I used a cheese grater)
  • Non-serrated knife
  • 3 – 9 10x 15 cookie sheets ( I didn’t have 3 so I just lined my table with wax paper)
  • Wooden spoon
  • Large pot
  • Slotted spoon

Ingredients

  • 2 & 1/4 lbs russet potatoes, skin on
  • 1 cup+/- all purpose flour
  • 3/4 Tsp sea salt, you will also need a bit more to salt the water
  • 1 large egg
  • Homemade sauce. Potato gnocchi is not good plain.

That’s it. So this is also an incredibly frugal meal as well.

 

Directions

This is the recipe from the cookbook in my own wording.

  • Halve the potatoes -leave the skin on.
  • Fill a large pot with cold water and salt. Add potatoes and bring to a boil. Cook for 20-30 minutes until potatoes are soft and can be pierced with a knife easily all the way through.
  • Flour your work surface with about 3/4 cup of the flour. You can always add more if you need the whole cup.
  • Put the warm potatoes in a potato ricer. You do not need to peel them first if you use a potato ricer. Then squeeze the potatoes onto the floured work surface and wait for them to cool a bit. (If you don’t have a potato ricer and use a cheese grater you will have to peel them first.

  • Add the sea salt and egg and knead until you get a smooth dough. ( If you have a stand mixer you can use it to save time) It will be ready when it is smooth and doesn’t stick to your work surface. Add more flour as needed but do not use too much more than a cup or you will have dumplings. Divide the dough into 8-10 balls the same size. Roll each ball into 2/3″ thick ropes. This is where my kids came in handy.

  • Cut the ropes into 1″ thick pieces. You can try using a fork to make the pretty designs which I did, but gave up 1/4 way through. They looked better without the fork imprints after I cooked them. Like little pillows.

  • Let the gnocchi rest for 15 minutes
  • Boil a large pot of water and generously salt it. Add gnocchi and cook for 1-2 minutes. Once they float, they are finished cooking. Remove them with a slotted spoon to drain some of the water and toss them in in your prepared sauce.
  • Serve immediately

What sauce to use for your gnocchi?

With over 30 sauces in Homemade Pasta Made Simple I’m sure you will find one you like. I decided on the tomato and basil and topped it with a little cheese and parsley. It was delicious.
