Homemade Flour Tortillas

Store-bought tortillas are expensive and full of a lot of weird things.  Homemade tortillas are really easy to make. They last in the fridge for a while too.  I tried about 15 recipes before I came across this one.


4 cups all-purpose flour

1 tsp salt

2 tsp baking powder

2 Tbsps Bacon grease, lard or butter

1 1/2 cups of water


In a large bowl combine all dry ingredients and mix well.  Then you need to cut the fat into the flour mixture.  The easiest way is with a blender or food processor.  Just dump the flour into the food processor and add the fat, I prefer bacon grease. Blend until it has a cornmeal texture. Return back to the mixing bowl. Make a well in the flour mix and add water. Mix and knead for about five minutes until it has an elastic, smooth texture. Cut into sections.  Roll into balls, then use a rolling pin to flatten to about a 1/8″.  You can go thicker for a more of a gordita taste. In a pan or griddle cook a minute or so on each side.  If you cook them too long they will be a  bit crispier.  Continue to cook for a chip-like crunch.
