No not real porcupines!

 

Flashback to the 90’s with this recipe.

 

I loved these when I was a kid. We ate them all the time. I don’t know where they came from but I just found my mom’s recipe and decided to make them and I still love them and they were a hit with my kids.

With only three ingredients, they are cheap, easy, and filling.  You could also sneak some veggies in if you have picky eaters. I haven’t tried it but I’m sure shredded zucchini, maybe little-chopped mushrooms cut small would work and not be noticeable. Let me know how it works if you try it.

They are great with the gravy that is made from cooking them, you don’t have to do anything just spoon over the top.

Or dip in ketchup, mustard, chili sauce….

What you will need:

Porcupines

 

  • one pound hamburger
  • one egg
  • one box of beef flavored rice-o-roni
  • 2 cups of water
  • frying pan

 

Directions:

 

  • Mix the egg, hamburger meat, and rice in a bowl.
  • Roll into balls the size of your palm. I got seven out of the pound of hamburger.
  • In a frying pan add the rice-a-roni seasoning and two cups of water
  • Bring to a boil
  • Add porcupines then cover and reduce to simmer
  • They take about 40 minutes to cook.
  • Flip halfway thru
